Dr. Faustman has taught a large number of courses while simultaneously developing a core set of new courses which emphasize the food science aspects of animal-based food products. His sucessful teaching program attracts and trains students at all levels, and his instruction is viewed as organized, enthusiastic and engaging. Dr. Faustman has won numerous awards for both his teaching and research and serves on numerous committes that affect student well-being. His reseach interests are meat pigment and lipid chemistry, food science and meat microbiology. |
