Cameron Faustman, Ph.D


Department Head and Professor, Animal Science

Dr. Faustman recieved his B.S from the University of Connecticut and both his M.S and Ph.D from the University of Wisconsin. Dr. Faustman joined the faculty at the University of Connecticut in 1989.

Dr. Faustman has taught a large number of courses while simultaneously developing a core set of new courses which emphasize the food science aspects of animal-based food products. His sucessful teaching program attracts and trains students at all levels, and his instruction is viewed as organized, enthusiastic and engaging. Dr. Faustman has won numerous awards for both his teaching and research and serves on numerous committes that affect student well-being. His reseach interests are meat pigment and lipid chemistry, food science and meat microbiology.
